Easy Banana Berry Muffins

Dairy Free / Refined Sugar Free / Freezer Friendly / Basic Pantry Ingredients


Great for a snack when you feel like something a little delicious but don't want all the added processed sugars and fats. Also a good one for kids lunch boxes.


Ingredients:

  • 2x banana's (mashed)

  • 1x egg

  • 1/2 cup water

  • 1/2 cup extra virgin olive oil

  • 2 cups wholemeal self raising flour

  • 1 teaspoon bicarbonate soda

  • Big handful blueberries

  • Big handful raspberries

  • Sprinkle of cinnamon

  • Rolled oats and honey to top


Method:

  1. Pre heat oven to 180 degrees Celsius (fan forced).

  2. Combine together the banana, egg, water, oil, flour and bicarb in a mixing bowl.

  3. Fold in the blueberries and raspberries, and sprinkle through as much or as little cinnamon as you like.

  4. Line a muffin tray with muffin cases.

  5. Spoon mixture into muffin cases in muffin tray - the recipe makes approximately a tray of 12 muffins depending on how big or small you would like them to be.

  6. Sprinkle some rolled oats and a drizzle of honey on top of each muffin.

  7. Pop in the oven for 20-30 minutes or until golden brown.
