Great for a snack when you feel like something a little delicious but don't want all the added processed sugars and fats. Also a good one for kids lunch boxes.
Ingredients:
2x banana's (mashed)
1x egg
1/2 cup water
1/2 cup extra virgin olive oil
2 cups wholemeal self raising flour
1 teaspoon bicarbonate soda
Big handful blueberries
Big handful raspberries
Sprinkle of cinnamon
Rolled oats and honey to top
Method:
Pre heat oven to 180 degrees Celsius (fan forced).
Combine together the banana, egg, water, oil, flour and bicarb in a mixing bowl.
Fold in the blueberries and raspberries, and sprinkle through as much or as little cinnamon as you like.
Line a muffin tray with muffin cases.
Spoon mixture into muffin cases in muffin tray - the recipe makes approximately a tray of 12 muffins depending on how big or small you would like them to be.
Sprinkle some rolled oats and a drizzle of honey on top of each muffin.
Pop in the oven for 20-30 minutes or until golden brown.
