Apricot Delight Protein Balls

Protein balls can be an easy way to boost up your protein intake at snack times. Feel free to add more protein powder if you wish to further boost up the protein content, adding more water for moisture as you need. You can swap out the apricots and almonds for other dried fruit/nuts of your preference. Try to have no more than 1-2 protein balls as a snack.
Ingredients:
1 cup raw unsalted almonds
1 cup dried apricots
1/4 cup vanilla flavoured whey protein isolate powder (e.g. Barinutrics Nutritional Support Vanilla Protein)
1/4 - 1/2 cup water
Finely desiccated coconut
Method:
Using a food processor, blitz the almonds into a powder.
Add the dried apricots and protein powder, blitzing until smooth, adding water slowly until desired consistency is reached.
Roll mixture into 14 even balls, coating with the desiccated coconut. Hint: when rolling the balls it is best to have wet hands.
Place balls on a baking tray lined with baking paper and refrigerate overnight.
